Alaea is the traditional sea salt of Hawaii — one of the most visually striking and culinarily distinctive salts in the world. Its deep terracotta color comes from the addition of purified volcanic red clay (alaea), which enriches the salt with iron oxide and gives it a subtly earthy, mineral flavor that is mellower and rounder than standard sea salt. Traditionally used by Native Hawaiians for preserving, seasoning and in ceremonial practices, it is wonderful with fish and seafood, grilled meats, and roasted root vegetables.
