Apricot Jam
This is the first jam Pascale learned to make — her grandmother Geneviève's recipe from the French Alps, where the apricot trees in the garden would produce a glorious summer harvest that was carefully preserved to last through the winter months. Made at Pascale's Kitchen in small batches using organic, locally sourced apricots with no preservatives, pectin or additives, it is packed with fruit and has the deep, honeyed sweetness of apricots at their summer peak. Spread it generously on toast, swirl it through yogurt, serve it alongside a ripe cheese, or use it to fill a tart shell for an instant French-style apricot tart.
