Pascale's Kitchen's Herbes de Poisson is a hand-blended seasoning mix created specifically for fish — a fragrant combination of coarse sea salt, fennel seeds, coriander seeds and mustard seeds, blended in-house in Santa Barbara. It could not be simpler to use: drizzle your fish with a little olive oil, scatter over a generous pinch of this blend, and roast or grill. The fennel and coriander seeds perfume the fish beautifully as it cooks, creating a dish that tastes far more elaborate than the effort involved. Equally good with salmon, sea bass, cod, halibut, or any firm white fish.
