Ras El Hanout
Pascale's Kitchen's Ras el Hanout is a hand-blended Moroccan spice mix made in-house in Santa Barbara. The name means 'top of the shop' — a merchant's very finest spices — and traditionally every family guards their recipe closely. Pascale's Kitchen's blend combines allspice, cinnamon, coriander, cloves, cumin, black pepper, white pepper, fennel, ginger and turmeric into something deeply aromatic and warmly complex. It is the key spice in Pascale's celebrated Citrus Chicken Tajine, and equally at home with couscous, roasted lamb, slow-braised vegetables, and hearty winter soups. A teaspoon added to a simple roast chicken changes everything.
